Tiny vanilla cup cakes using the basic sponge cake recipe. Most of us can make this in our sleep, right?

Wrong! We had to do it the old-fashioned way - using a wooden spoon. I've never missed a machine so much. Creaming the margarine and sugar was a pain! The slight nip in the air made it just that much tougher, as it took longer to mix.
I wasn't too kicked about the taste either because we were given margarine instead of butter. Now we all know that there's nothing like a butter sponge. Mmmmmmmm... Anyhoo, it was a good experience all the same.

Best day so far! I learned how to make short-crust pastry and got it right on my first attempt. It's really tricky and takes a while but I really enjoyed doing it. I'm so happy, I will now be able to make melt-in-the-mouth tarts and pies.
Yesterday they had us make the kiddy delight - jam tarts!
The best part - we also learned how to make lemon curd AND got to sample lemon tarts. Which are my absolute favourite tarts!

Cup cakes again, but this time with mava and some cardamom powder instead of vanilla. Divine! I don't need to go to an Irani restaurant again for mava cake, it's really simple to make at home. Met some of my friends after class (one for coffee, and two for dinner later), so they finally got to sample my "school work". They loved the cakes, in fact I just ate one and gave the rest away. If I keep eating the stuff I bake everyday I may not even live long enough to finish the course! And I've switched to Sugar Free Natura for tea and coffee. It's pretty good actually.
Did I mention that we get to take the day's loot back with us everyday, for a very tiny amount of money. It's practically free!
Now, who wants to pick me up from school and drop me home every evening?

That stuff looks delicious!
Are you going to be learning to make croissants too?
see? i TOLD you you know better than them! margarine sponge! sacrilege! you should start your own classes.
Those lemon tarts look positively sexy.
I believe to make good pastry you need to have cool hands - cool hands warm heart.
I do!
So where is your other blog - the one which contains recipes to these divine li'l things?!
@Dewdrop - Yes we will be making chicken croissants and cheese croissants too. Will post the pix and recipes here when we do.
In fact, today the students from the full-time course made them and our teacher saved one for me to taste. I'm already her pet :-)
@Mentalie - No, no, no! Don't say that. Our teacher is a sweetheart. They give us margarine because it's too expensive to use butter when there are so many students. We are always told to use butter when we make it at home. But you should know that commercially, everyone uses margarine and the real sidey places use dalda!!!
@Pat - These were the best lemon tarts I've eaten. The lemon curd they make at my college is just fabulous.
Yes, you're right about the cold hands. But I've always been told that I have warm hands :-( I hope I can still make good pastry though.
@CoherentBlah - Welcome! You want me to start another blog now!?! I can barely keep up with this one :-)
Hi CC - So when are you having me over for tea? ;) Stuff looks yummy.
I can see you're have fun!

PS: I'm knocking off your School = Lunch Button to use on my blog - Do you mind?
@Corinne - Anytime! Cakes were invented for people to get together and enjoy over a cup of tea or coffee :-)
Please use the button. It's not mine, it's AGG's but am sure you can use it to link to the middaymeal.com site. Such a good cause and they are doing it so well. In fact, I need to get it on my side-bar asap.
Thanks CC! (I used to be CC once - Corinne Campos!)

Happy you took the camera. Now we have pics and you are buidling your portfolio!
Yumza!
@Sheer - It can only be very basic point-and-shoot stuff though. It's at the school kitchen so I can't manipulate the lighting or play around with backgrounds. But I just want to keep these pix to remember later. My phone camera clearly sucks!
If only I lived in Bombay, I'd drive down everyday :D
Ooooh that cake is one helluva gorgeous beauty... coffee and walnut and chocolate??? I want :)
you were right when you said we're similar! you have no clue how much i love muffins and cupcakes and cakes!
